Ernesto Luna, Executive Chef from Iron Horse Restaurant

BIO:

Although Executive Chef Ernesto Luna only recently donned his toque
for The Iron Horse Restaurant, he literally brings a world of
experience to the Village of Glendale. Italian by birth, Chef
Ernesto's career includes his professional training throughout Europe,
culminating as one of the chefs at the famed Hotel Palace St. Moritz
in Switzerland. From there, he has led the kitchens at Agua Restaurant
on Grand Cayman Island, Buon Appetito in Cabo San Lucas, Mexico, and
Casanova Restaurant in Lexington, Kentucky among others. For those
wondering how he made it all the way from Varese, Italy to Cincinnati,
Ohio, we are sure his lovely wife Ivory had everything to do with it.
 

PHILOSOPHY:

"Work with ingredients that will inspire you to create magic; prepare
meals like you would for your loved ones. Trust your instincts, guide
those around you efficiently, be a strong leader and a better
listener, and take time out for yourself because it will pay off in the
long run. Observe everything and take nothing for granted. This might
not be a great philosophy but I live by it because it trickles down to
what I do in the kitchen.
